- W2989448497 abstract "Vegetables represent the second largest commodity in terms of generation of food losses and waste, comprising 24% of the global food waste and 21% of the carbon footprint. About 54% of the vegetable waste is produced upstream from postharvest and storage of agricultural items, while 46% occurs downstream from processing, distribution, and consumption. Mexico is ranked 13th as a global food producer of agricultural crops; furthermore, it is the second global exporter of fresh and chilled vegetables contributing 25% of food consumed in North America. Tomato, chili, broccoli, cauliflower, zucchini, and cucumber are the main vegetables produced in Mexico that are incorporated in the world diet and/or processed products with nutritional and nutraceutical properties. In this chapter, we address the upstream vegetable losses from agricultural production and postharvest occurring as products of low commercial value due to outranking in maturation, size, and esthetic characteristics; the downstream vegetable losses through processing and the generation of by-products (peel, seeds, stems, and unused flesh); and finally, the potential use of such vegetable by-products as a source of bioactive compounds (phenolics, carotenoids and other pigments, fiber, pectin, vitamins, and minerals) for human consumption and health. Their nutraceutical composition, in vitro and in vivo bioactivity, and transformation to innovative value-added food products are also discussed." @default.
