- W2992450483 abstract "It was the aim of the project to compare the consequences with respect to meat quality if brightness and waterholding capacity are combined in a typical as well as in an untypical manner. From 318 carcasses derived from various breeds loin samples with ultimate pH-values ≤ 5,80 were selected at the progeny testing station Schwarzenau. Using L* 24 h p.m. and drip loss 24 to 72 h p.m. as leading criterions limits between red/pale and dry/watery resp. have been constituted on the level of the median values (L*: 52, drip loss: 3,4 %). In this way four model categories have been formed: red and dry, pale and dry, pale and watery, red and watery. Pork with drip loss higher-than-average has similar levels of pH 1 and electrical conductivity 24 both in case of pale colour and in case of red colour. In the investigated material higher-than-average watery pork is in 75 % of all cases associated with pH 1 5,0, longissimus muscle area > 55 cm 2 and lean content (formula according to the guidelines of progeny testing) > 62 % but not with a significantly higher shear force. More than 90 % of those watery samples are derived from Pietrain and Pietrain x Landrace pigs." @default.
