Hence the nutritional interventions have received an increase in attention, particularly “ancient super grains” like millets, due to their diverse significance in human health beyond the supply of energy and basic nutrients. The cereal grains were replaced from our diet as a result of industrialization and urbanization. Currently, food industries are switching to multigrain formulations enriched with a higher amount of bran dietary fibers as dietetic supplementation for obesity and diabetes. The present chapter provides comprehensive knowledge about cereal grain nutrition and their nutraceutical benefit to human health. Digestible and indigestible carbohydrates contain distinct metabolic properties which can help to reduce calorie intake. The interaction of dietary fibers with host gut microbiome is reported to be associated with the reduction of inflammatory diseases. Proteins and lipids are the added advantages of cereal grain products. The bran oils contain a higher level of polyunsaturated fatty acids which are beneficial to maintain normal health. Apart from the macromolecules, phytochemicals like phenolic compounds can be used as nutraceuticals to control various metabolic disorders. Understanding the physicochemical characteristics of nutrients and phytochemicals could lead to the formulation of healthy dietary products from the whole grains or milled fractions. Further, it helps to optimize the processing parameters to retain or minimize the loss of nutraceutical components." @default.
