The purpose of this research was to determine the relationship between low-fat eating behaviors (LFB) and health characteristics/behaviors. A sample of 245 people completed surveys assessing LFB; Recommended Food Score (RFS); Eating Disorders Inventory (EDI); fruit and vegetable (F/V) intake; exercise; body mass index (BMI); chronic disease presence; eating importance to health (EatHlth); and Stages of Change classifications: low-fat eating, fruit, vegetable, and exercise. Pearson and Spearman Correlation and T-test analyses were used to determine the relationships between LFB and health characteristics/behaviors. Subjects used the avoid frying LFB most frequently followed by modifying meats, replacing fats, substitution, and avoiding fat. There were no differences in LFB use by gender, EDI, # snacks/day, buying/preparing own food. Low-fat eating behaviors were significantly related to a variety of health variables: F/V intake r = .225 (P < .001), RFS r = .389 (P < .001), meals/day r = .130 (P < .05), EatHlth r = .153 (P < .05), BMI r = -.246 (P < .001), weight loss goal r = -.218 (P < .01), and exercise mins/wk r = .270 (P < .001). Subjects with a chronic disease or those who did not plan their own meals used less LFB (P < .05). Use of LFB increased with advanced Stages of Change classifications for low-fat eating and exercise (P < .001) and F/V intakes (P < .05). These results suggest that those who use more LFB appear to be engaged in a variety of health enhancing thoughts and behaviors for disease prevention/health promotion and might be successful due to these associations." @default.
