Wheat is an important staple cereal providing major source of energy and protein across the world. However, there are several antinutritional factors present in wheat, such as phytate, protease inhibitor, tannins, lectins, alkaloids, oxalate, etc. Phytate, being the most important among all, reduces the bioavailability of micronutrients such as iron and zinc. Various approaches including traditional and molecular breeding and genetic engineering have been deployed to reduce antinutritional factors in the grains. Here, we discuss various ways and means to reduce their inhibitory effect on bioavailability of micronutrients." @default.
