- W3037810310 abstract "In recent decades, ultrasound (US) irradiation technique has established itself for its potential application in several processes in the field of food processing and biotechnology. Although ultrasound treatment was earlier explored mainly for inactivation of microbes by conferring an adverse effect on cellular structure, a recent development in the field has presented another approach where ultrasound exposure will not affect macromolecules such as an enzyme if provided at mild experimental conditions. Moreover, at the appropriate intensity and frequency level of ultrasonication, the catalytic activity of the enzyme may enhance significantly. US-assisted biocatalysis has been studied all over the world since it offers notable enhancement in the rate of reaction while maintaining the integrity of the enzyme structure. This chapter provides a brief overview of the literature concerning the effect of ultrasound on biocatalysis while offering possible improvements for the future. It also covers all the experimental parameters that direct the overall efficiency of the process. Moreover, it also includes the effect of ultrasound on enzyme kinetics along with its thermodynamic parameters. Also, US-assisted biocatalysis can reduce the amount of enzyme required since it enhances the overall catalysis by improving the mass transfer in the system. Finally, the ideal parameters to obtain an efficient and sustainable US-assisted biocatalysis protocol are discussed." @default.
