As a processed food products, smoked tuna fish must immediately go through a safety and quality test from BPOM if it is to be distributed and used massively as a business product. This study was conducted to analyze the quality of microbiology of tuna in Kedonganan Market. The parameters analyzed were: total plate count (ALT) and identification Staphylococcus aureus bacteria. This study used descriptive research with laboratory tests conducted at the Bacteriology Laboratory of the Department of Health Analysts. The large sample in this study is 16 samples with a sampling technique that is cluster sampling. (100%) traditional scrub samples meet the standards based on BPOM Regulation Number 16 of 2016. The results of the meeting of Staphylococcus aureus were obtained as many as 2 (12.5%) identified as Staphylococcus aureus in tuna fish as soon as possible. It is expected that smoked tuna traders can pay attetion ti the sanitation of smoked tuna produced does not caus health problems. Sama seperti produk olahan makanan lainnya, ikan tuna asap harus melalui uji keamanan dan kualitas dari BPOM jika akan didistribusikan dan dikonsumsi secara masal sebagai produk usaha. Penelitian ini dilakukan untuk mengetahui kualitas bakteriologis ikan tuna asap di Pasar Kedonganan. Parameter yang dianalisis pada penelitian ini antar lain adalah angka lempeng total (ALT) dan identifikasi bakteri Staphylococcus aureus. Penelitian ini merupakan penelitian deskriptif dan pemeriksaan laboratorium dilakukan di Laboratorium Bakteriologi Jurusan Analis Kesehatan. Besar sampel pada penelitian ini yaitu 16 sampel dengan teknik pengambilan sampel yaitu cluster sampling. Hasil pemeriksaan ALT menunjukkan bahwa seluruh (100%) sampel ikan tuna asap memenuhi standar berdasarkan Peraturan BPOM Nomor 16 Tahun 2016. Hasil identifikasi Staphylococcus aureus yang dilakukan menunjukkan bahwa terdapat 2 sampel (12,5%) terindetifikasi bakteri Staphylococcus aureus dan 14 sampel (87,5%) lainnya negatif. Kepada pedagang ikan tuna asap diharapkan dapat memperhatikan sanitasi proses pengolahan ikan tuna asap agar ikan tuna asap yang dihasilkan tidak menimbulkan masalah kesehatan.
