- W3044804004 abstract "Abstract A strict gluten-free diet (GFD) is currently the only safe and efficient therapy for celiac disease patients. All products derived from wheat, rye, and barley (and in some cases oats) have to be avoided. A GFD is also indicated in dietary wheat allergy, nonceliac gluten sensitivity, and diarrhea-predominant irritable bowel syndrome. Alternative gluten-free products may be made from gluten-free cereals like corn and rice or pseudocereals like amaranth and buckwheat or other naturally gluten-free ingredients. Gluten-free products, bearing a gluten-free label, are foods for special dietary purposes that need to fulfill national and international regulations regarding the maximal gluten content (less than 20 mg/kg in most countries). The analysis of gluten contamination, potentially present in foods labeled gluten-free, involves the extraction of gluten proteins, the application of a suitable protein reference for calibration, and the quantitation of extracted gluten proteins preferentially by enzyme-linked immunosorbent assay (ELISA). A life-long GFD is difficult to sustain owing to the restricted availability and high costs of gluten-free alternatives, their often poor quality, and potential contaminations with gluten. Many patients, suffering from wheat hypersensitivities, therefore consider the GFD as a substantial burden that decreases quality of life and their most pronounced desire is the development of a pill or a vaccine that will allow them to eat gluten-containing foods. A number of novel strategies for alternative therapies have been developed and some of them have already reached clinical trial status." @default.
