• W3123263722 abstract "The importance of surfactants from natural-sourced materials such as sugars, glycerol, and fatty acids is increasing in various industries as alternatives of petrochemical-sourced surfactants. Phase behavior of aqueous and nonaqueous systems with natural-sourced surfactants such as alkyl glucosides, sucrose fatty-acid esters, and glycerol/polyglycerol fatty-acid esters is summarized in this chapter. They form micelles and liquid crystals depending on concentration and HLB as do conventional surfactants. Compared to poly(oxyethylene)-type surfactant, micelles and liquid crystals formed by sugar surfactants show higher temperature insensitivity due to strong hydrogen bonding ability of hydroxyl groups in hydrophilic moiety. Glycerol fatty acid esters or monoglycerides act as hydrophobic surfactants and form reversed structures in water such as reversed bicontinuous cubic and hexagonal phases whose dispersions in excess water are potential nanosized carriers for water-insoluble drugs and active molecules. Because of their strong hydrogen-bonding ability, mono- or diglycerol fatty-acid esters can form reverse micelles in nonaqueous solvents, and the binary surfactant/oil systems show a UCST-type miscibility gap that is exactly opposite to a clouding curve in an aqueous nonionic surfactant system. Increasing glycerol units of polyglycerol fatty acid esters allows formation of normal-type structure such as micelles and hexagonal and lamellar liquid crystals." @default.
