- W3128696887 abstract "Abstract With the common idea that enzymes are expensive, sensitive to their environment and work only in aqueous medium, there are certainly limitations to their uses in industrial applications. These limitations are due to the effects of the environment on the enzyme's three-dimensional conformation and consequently on its catalytic activity and kinetics. However, over the past few decades there was spectacular progress in enzyme chemistry and engineering and a better knowledge on the nature of the enzymatic protein. This led to a better understanding of the behavior of enzymes and to develop a novel approach to carry out the enzymatic reactions in nonconventional media rather than in aqueous medium in order to expand their potential uses in industrial applications. Indeed, the development of various approaches in nonconventional media, such as organic solvents, solvent-free, ionic liquids, supercritical fluids, and solid-gas, amplify the potential applications of enzymes in industrial processes. This chapter covers the basic principles of biocatalysis of enzymes in nonconventional media, in terms of their classification as well the major parameters that could also affect their activity and specificity. It will also cover examples of enzymes that have potential industrial applications." @default.
