- W3131750239 abstract "The structure of proteins, which is tightly related to their interfacial behaviors, is strongly affected by environmental conditions. The objectives of the present study were to explore the effects of pH on particle size, zeta potential, surface hydrophobicity and –SH of ovotransferrin (OVT), and then compare the interfacial behaviors of OVT at various pHs. The results showed that the zeta potential changed from +10.24 to −18.83 mV over a pH range from 3 to 13. The particle size initially increased and then decreased. In addition, more –SH were exposed and the hydrophobicity of the OVT was enhanced when the pH level deviated from pH 6.5. Compared with OVT at other pH values, at pH 5, OVT had a higher penetration and rearrangement rate, which resulted in it more rapidly forming a high elastin membrane (dilatation viscous modulus, dilatation elastic modulus were 46.32, 16.33 mN/m respectively) at the interface. The high elastic interfacial adsorption layer can prevent the polymerization of bubbles, which is beneficial to the stability of the foam. At pH 13, OVT had a higher surface pressure (13.579 mN/m), which was conducive to the formation of foams. Also, the interfacial properties were a function of the OVT concentration.
