Their practical performance is mainly determined by their chemical structure, which renders outstanding properties. The chapter is focused on describing the main structural properties of the most relevant types of polysaccharides. The conformational features are reflected in the solution properties of such biopolymers, so their processing is strongly connected to the rheological behavior in solvent medium. The most significant developments in shear flow behavior and viscoelasticity of polysaccharides and more complex systems derived from them are presented and discussed in relation with the polymer chemical structure.
