The main purposes for application of nanotechnology in food industry include extending shelf life, enhancing delivery of bioactive food ingredients, improving physicochemical properties of food, and developing functional foods. Safety concept generally refers to the biocompatibility between the used nanomaterials in food system or food packaging and human body. So, it is essential to evaluate the responses of host body to the nanomaterials. In this chapter, a brief review is initially presented about the biological fate of food-based nanomaterials. Subsequently, possible health risks of food-based nanomaterials will be discussed. Further, detection, characterization and safety assessment of food-based nanomaterials by in vivo studies compared to in vitro studies are discussed. Moreover, related methodologies with different approaches and the used model organisms for in vivo toxicity assay of nanomaterials are given. Eventually, key issues in development and standardization of in vivo assays are highlighted." @default.
