- W3202886987 abstract "The aim of this study was to evaluate the effect of nisin and e-polylysine (e-PL) combined with ascorbic acid on the color, lipid oxidation, microbial communities, and biogenic amine formation in Chinese dry sausages. Three treatments (sausages treated by nitrites, treated by nisin combined with ascorbic acid, and e-PL combined with ascorbic acid) were done. Our results revealed that nisin and e-PL treatment could maintain the color of dry sausages compared with nitrite treated sausages. Within 20 days, the lightness ( L* ) and redness ( a* ) from e-PL treatment were slightly higher than that of nisin and nitrite treatments. Except for day 10, nisin and e-PL treatments could significantly (P<0.05) reduce TBARS values during storage, compared with nitrite treated sausages. Results of the bacterial community compositions showed that Firmicutes, Proteobacteria, Actinobacteria, and Bacteroidetes were the dominant phyla. In terms of the genus level, the total proportion of the potentially beneficial bacteria ( Lactococcus , Pediococcus, and Staphylococcus ) were 22.6%-34.8% in the Nit treatment, 19.5%-48.2% in the nisin treatment, and 16.2% -22.4% in the e-PL treatment. Putrescine (67.1-275 mg/kg) and tyramine (30.4-216 mg/kg) are the two main BAs in dry sausages. Nisin and e-PL could significantly (P<0.05) reduce the concentration of putrescine. Staphylococcus , Proteus , Enterococcus, and Klebsiella were the main bacteria genera that had a significant (P<0.05) positive correlation to BA accumulations. This study revealed the potential of nisin and e-PL on replacing/reducing nitrates/nitrites in dry sausages." @default.
