- W3211019301 abstract "Food is fundamental in every civilization. For the French, it has always had a special place and it is definitely part of their cultural identity. Due to famine and wars, not everyone ate sufficiently over the centuries. Until the French Revolution, the aristocracy and the haute bourgeoisie were privileged to have their personal chefs. After 1789, a new era started; restaurants flourished in Paris for the new bourgeoisie, abundance of luxurious produces could be purchased by anyone with money, cooking literature started to be circulated, and finally famines were over by 1850s. -- This course will focus on these changes and especially on food as a symbol and on its cultural aspects during that period. We will use some excerpts from literary and culinary works of the 19th century and will apply 20th century sociological texts since no such studies existed during the 1800s. Finally, we will study food and matters related to foods in a sociological, historical, geographical and economic context that will help us understand France during the 1800s." @default.
