- W4206500611 abstract "Proteinases exogenous to milk are crucial for developing dairy products with improved organoleptic and nutritional characteristics and novel ingredients with specific technofunctional and biofunctional properties. Proteinases of animal, plant or microbial origin have been used traditionally for the manufacture of hundreds of cheese varieties. In addition, a wide range of ingredients, derived from caseins and whey proteins, with defined technofunctionality has surged via the use of selected proteinases. More recently, the optimized use of proteinase preparations and proteinase-producing microorganisms has permitted the generation of nutraceuticals and dairy products for populations with specific nutritional needs. The use of exogenous proteinases for the development of novel dairy products and ingredients, as well as the technofunctional and biofunctional properties of these products and ingredients, will be discussed." @default.
