Phenol itself is thought of as a toxic disinfectant inimical to food and the adjective phenolic or the term polyphenol (most but not all natural phenols have more than one phenolic hydroxyl) have been substituted. Furthermore, owing to widely differing special attributes, natural phenols have usually been considered by separate groups as red pigments, tannins, browning substrates, antioxidants, etc., ignoring their phenolic commonality. It is useful, however, to consider these compounds together as natural phenols since that produces more order and perspective regarding their chemical reactivity and analysis. Now that their biochemical origins are understood, with phenylalanine the predominant precursor in food plants, this practice should become common." @default.
