With the ever- increasing population and change in consumer preference and lifestyle, the innovation and necessity of preserving food with still better nutritional quality and sensory attributes has led us to the advanced processing and preservation methodology. Among various thermal processing methods of foods, aseptic processing takes the credit to preserve the food with minimum loss of nutrients along with incredible extended shelf life, undoubtedly without need of refrigeration as do the other methods. Aseptic processing is a high/ultra-temperature short time thermal process aiming to destroy the spoilage-forming microorganism for the extension of shelf life and optimum recovery of nutrients. The method has been adopted for almost all the types of foods including fruits, vegetables, dairy products, etc. The food is thoroughly maintained in aseptic condition assuring no entry to microorganisms starting from processing of food until intermediate storage and packaging as a final step. Controlled utility of heat for controlled time to process the food for attaining sterility and use of chemical such as hydrogen peroxide individual or in combination to heat, contributes to the success of the process and the product. Aseptic processing and packaging has revolutionized the preservation of food in various available sizes and shape, from retail and bulk packages attracting consumers in supermarket to global trade and also satisfying the needs of army and space personnel." @default.
