- W4239335034 abstract "41種の野生キノコの遊離糖,遊離糖アルコールおよび有機酸分布を検討し,以下の結果を得た.(1) 各種キノコ類の乾物重量100g当りの遊離糖含量は0.1～29.3g(平均9.95g),遊離糖アルコール含量は0.7～29.3g(平均11.05g),有機酸含量は0.1～4.5g(平均1.56g)の広範囲に分布し,キノコの種により含量にかなりの差異が認められた.(2) キノコ類の遊離糖・糖アルコールとしてトレハロース,グルコース,フルクトース,ガラクトース,マンニトール,アラビトール,meso-エリトリトールおよびグリセロールが確認された.また,各種キノコ類に含有される遊離糖・糖アルコールは5～7種類であり,総遊離糖・糖アルコールの8割以上が1～3種類の糖・糖アルコールで構成され,その分布パターンもキノコの種により特徴を有していた.(3) キノコ類の有機酸としてリンゴ酸,クエン酸,コハク酸,フマル酸,ピログルタミン酸,シュウ酸,乳酸,α-ケトグルタル酸,酒石酸,酢酸およびギ酸が確認された.各種キノコ類に含有される有機酸は7～11種類であり,総有機酸量の8割以上が2～4種類の有機酸で構成され,その分布パターンもキノコの種により特徴を有していた." @default.
