- W4240630008 abstract "Buckwheat (BW) grain is a highly nutritional food component that provides numerous beneficial effects, including hypocholesterolemic, antihypertensive, anticancer, antiinflammatory, antidiabetic, and neuroprotective activity. This chapter reviews recent research regarding the health benefits of BW, focusing on the role of its bioactive compounds and the associated molecular mechanisms. Understanding the absorption and metabolism of the BW flavonoids is essential to evaluate their potential effects on health. In vitro digestion simulation studies have shown that the phenolic content of BW is quite stable under the physiological conditions of the stomach. Although there is no food that can retard or prevent cancer, the regular consumption of some vegetable foods, such as BW, has been linked with a lower risk of developing certain cancers. Some of the proposed mechanisms whereby this pseudocereal may exert its anticancer effects include: antioxidant activity; antiinflammatory activity; alteration of gene expression; inhibition of proliferation; cell cycle arrest; and apoptosis induction." @default.
