- W4245004657 abstract "Postharvest decay and disease is actually the main factor that cause a reduction of citrus availability and financial profits, heat treatment is considered as a key method in prevention of postharvest decay and disease. In This study, a new definite physical model simulating the spatial and temporal distribution of temperature inside citrus fruit in heat treatment process had been proposed. After having introduced physical processes involved in the fruit heat treatment, the mathematical model, the numerical techniques used and how the model was established, were described. This transient heat transfer model was based on mathematical numerical calculation of the 3D unsteady thermal conduction differential equations, steady and homogeneous heat fluxes were chosen as boundary conditions. Temperature distribution with time inside citrus fruits in a heat treatment process at each moment was presented; time of heat spread from citrus fruit surface area to citrus fruit centre was computed. Results analysis provided reference and inspiration for citrus heat treatment process time management and theoretical guidance of parameters optimization." @default.
