Consequently, the progress in the investigations of natural compounds, which may act at physiological target sites with the potential to provide benefits and well-being, became a growing necessity. Mushrooms being distinct from plants and animals possess unique primary and secondary metabolites and are natural sources with promising health welfare. This chapter discusses the role of edible mushrooms in oxidative stress prevention and their contribution to cellular vitality and longevity.
