Jerusalem artichoke can be widely used as: renewable raw material for the production of ethanol and butanol, for the production of succinic, citric, and lactic acids, it can also be used in medicine, in the pharmaceutical and cosmetic industries because it contains numerous antifungals, anticarcinogenic, antioxidant, hepatoprotective, cardioprotective, anti-drug, and anti-inflammatory ingredients. Conventionally, Jerusalem artichoke has been used as food or animal feed, and alternative uses have been explored over the last three decades, especially for the production of functional food ingredients such as inulin, oligofructose, and fructose. Propositions of Jerusalem artichoke-based products and components for the production of functional food were also presented. The market of food products using both raw materials and functional ingredients is systematically growing, thus supporting the prevention of diet-related diseases. Functional food has been shown to make a significant contribution to promoting a healthy lifestyle. These diverse applications, along with low plantation costs, make H. tuberosus a promising biomass for the development of the bioeconomy. One of the many questions that needs to be answered is whether supplementation of inulin and its derivatives derived from tubers or the aerial parts of H. tuberosus can be used as an anti-diabetic, anticarcinogenic, antifungal, anti-inflammatory, cryoprotective, weight-reducing, detoxifying, or detoxifying agent, improving metabolism." @default.
