Though required in minute amount, its concentration in the human body is the second highest following that of iron. Very often referred to, as the metal of life, this micronutrient plays essential roles for humans throughout lifecycle starting as early as in the preconception phase up to adulthood. The versatile element is essential for a plethora of physiological functions and observes a major function in numerous enzyme actions for terrestrial life. However, zinc deficiency is a renowned malnutrition problem worldwide especially in regions where the diet is more focused on cereal and cereal products with poor consumption of animal sources of proteins. Dietary intake, anthropometric parameters and biochemical indicators are utilized to assess zinc deficiency which may arise in the various clinical forms. Beside an apparent failure to thrive, the systems which are mostly affected are the integumentary system, the nervous system, the skeletal system, the immune system and the reproductive system. Fortunately, there are various nutrition intervention strategies which can be implemented to address this global issue of nutrition deficiency. This book chapter provides an insight on zinc dietary sources and chemistry, zinc bioavailability, zinc in its role as an antioxidant, the beneficial and detrimental effects of zinc on human health, zinc as a supplement, in vitro studies in human cells, animal and clinical studies." @default.
