Generally, they are synthesized as secondary metabolites in plants that is why their extraction processes have been gained more emphasis during the last few years. In this chapter, various techniques for the extraction of phenolic compounds have been discussed. These techniques include conventional as well as modern methodologies. The conventional methodologies like liquid–liquid extraction and Soxhlet extraction are still being used as reference techniques in the study of development of new modern methodologies. Modern methodologies include solid–liquid extraction, supercritical fluid extraction, microwave-assisted extraction, and ultrasound-assisted extraction. These techniques have gradually replaced the outdated techniques. The modern methodologies have efficiently improved the extraction processes of phenolic compounds by less utilization of expensive solvents with less consumption of time. Different indicators are used to evaluate these modern techniques like time duration of extraction process, utilization of less quantity of expensive solvents, optimum application of parameters like pressure and temperature, obtaining quality extract with no degradation and less harm to the environment." @default.
