This work correlated the growth of the sustainable diet market to the many technology innovations and assessed the role of individual satisfaction when consumers select diets with lower environment impact and also improving their personal well-being. A survey of consumers revealed that environmental, ethical, and health concerns are the main drivers to follow a sustainable diet. In terms of eating pleasure, the survey revealed an increase from previous to recent generations. These observations confirmed the published work reviewed. Although some technologies can replicate the meaty characteristics of minced-type products, among which thermomechanical extrusion is the leading technology, developing whole-muscle meat analogs remains a challenge. Industry interest in alternative proteins as emerging markets is growing, but industrial production remains unaffordable." @default.
