Food safety programs include the control of veterinary residues, raised by the use of prohibited and authorized substances in farm animals. Veterinary drugs play an important role as they can be harmful to human health if exposure is not controlled. Today, food safety laboratories face a competitive market where government regulations require a greater number of sample tests to enforce legislation and ensure food safety. In particular, it is necessary to develop and validate analytical methods to monitor drug residues in foods of animal origin that allow the simultaneous analysis of a large number of residues, reducing analytical costs and increasing sample throughput. This chapter provides an overview of the current status and the most recent advances in LC–MS techniques applied to the analysis of veterinary drugs in food, summarizing the most representative LC–MS applications between 2017 and 2021. Recent examples illustrate the latest trends in sample preparation, as well as different mass analyzers and strategies, with particular emphasis on their capabilities, limitations, and related applications." @default.
