- W4380083256 abstract "Lactic acid is a product widely applied in chemical, biochemical, food, and pharmaceutical fields obtained by chemical routes, enzymatic catalysis, or fermentation. Microorganisms used in this process include bacteria, fungi, yeasts, and microalgae. However, most microorganisms used are lactic acid bacteria. Lactic acid fermentation can be conducted by batch, fed-batch, repeated batch, and continuous process in several configurations of microbial bioreactors. The success of fermentation for lactic acid production is related to the provision of ideal conditions to the producing microorganism, mainly temperature and pH, together with the fermentation operation mode and bioreactor configuration to obtain high concentrations, yields, and productivity of lactic acid. Thus, this chapter reports the producing lactic acid through microbial bioreactors, relating to the producer microorganisms, substrates used, and mode of operation to conduct lactic acid fermentation, as well as the main challenges regarding its industrial application." @default.
