- W4384297002 abstract "China has a long history of cereal-based alcoholic fermentation. Recent scientific studies of residues adhering to pottery vessels have revealed that this tradition can be traced back to 9000 years ago. This article reviews the general developmental trajectory of fermentation technologies during the Neolithic period (ca. 9000 to 3800 cal. BP) based on current archeological data, by focusing on three topics: (i) brewing ingredients and fermentation techniques; (ii) the relationship between the Neolithic revolution and the production of fermented beverages; and (iii) the development of complex society and alcohol-related ritual feasting. The emergence and development of alcoholic fermentation technologies were closely linked to the domestication of rice and millet and to pottery production, both of which characterized the Neolithic revolution. The advance of fermentation techniques may have been, to some extent, stimulated by the needs of ritual activities, and in turn, such ritual feasts may have played a pivotal role to help reinforce the increased social complexity in Neolithic China." @default.
