- W4384299674 abstract "The purpose of this study was to compare the extraction of cold pressed orange peel oil with a hydraulic press and an expeller, and to make Siam Pontianak orange juice concentrate on a pilot plant scale with a vacuum evaporator with the addition of Pontianak orange peel essential oil. This research was divided into two research stages, namely a comparison of the method of extracting orange peel oil with a hydraulic press and expeller and making Pontianak orange concentrate. The cold pressing method produces orange peel oil with an aroma resembling that of fresh oranges. The average yield of oil on Pontianak fruit with a hydraulic press was 0.56%, with an expeller press of 0.49% The average yield of oil on the skin with a hydraulic press was 2.92%, with an expeller press of 2.60%. The physical and chemical properties of the hydraulic cold pressing and expeller methods are almost the same in terms of specific gravity, refractive index, and evaporation residue. The aroma of hydraulic pressed Pontianak orange peel oil is preferred over the expeller. The solubility in alcohol of hydraulic cold pressed and expeller oil is the same because the component content of Pontianak orange juice concentrate with 70% total dissolved solids is the same. 80°Brix was produced during an evaporation time of 90 minutes with an evaporator temperature of 50°C and a pressure of 0.75 cm/kg. Siam Pontianak orange juice has a reddish orange color that the panelists like. The aroma is quite liked, while the taste is somewhat less preferred because of the bitter taste. ABSTRAKTujuan penelitian ini adalah untuk membandingkan ekstraksi minyak kulik jeruk cold press dengan pres hidrolik dan expeller, dan membuat konsentrat sari buah jeruk siam pontianak skala pilot plant dengan evaporator vakum dengan penambahan minyak astiri kulik jeruk pontianak. Penelitian ini dibagi menjadi dua tahap penelitian yaitu perbandingan metode ekstraksi minyak kulit jeruk dengan pres hidrolik press dan expeller dan pembuatan konsentrat jeruk Pontianak. Metode pres dingin menghasilkan minyak kulit jeruk dengan aroma menyerupai aroma jeruk segar. Rendemen rata-rata minyak terhadap buah jenuk Pontianak dengan pres hidrolik sebesar 0,56%, pres expeller sebesar 0.49% Rendemen rata-rata minyak terhadap kulit dengan pres hidrolik sebesar 2.92%, pres expeller sebesar 2.60%. Sifat fisik dan kimia metode pres dingin hidrolik pres dan expeller hampir sama baik dari berat jenis, indeks bias, maupun residu penguapan . Aroma minyak kulit jeruk Pontianak hidrolik pres lebih disukai daripada expeller. Kelarutan dalam alkohol minyak pres dingin hidrolik dan expeller sama karena kandungan komponen Konsentrat sari buah jeruk Pontianak dengan total padatan terlarut 70-utamanya sama. 80°Brix dihasilkan selama waktu evaporasi 90 menit dengan kondisi evaporator suhu 50°C dengan tekanan 0.75 cm/kg. Sari buah jeruk siam pontianak mempunyai warna oranye kemerahan yang disukai panelis. Aromanya cukup disukai, sedangkan untuk rasa agak kurang disukai karena adanya rasa pahit." @default.
