Therefore, it is essential to strengthen the research on rapid detection of the quality and safety of fruits and vegetables. This study mainly outlines five Raman spectroscopy techniques. It introduces their principles and advantages and the current research progress of their application in fruit and vegetable quality and safety detection. Based on the characteristic Raman spectroscopy analysis of different fruits and vegetables, researchers found that Raman spectroscopy techniques can quickly and accurately detect classification identification, ripeness, freshness, disease infestation, and surface pesticide residues of fruits and vegetables. In addition, Raman spectroscopy techniques can also detect the content and distribution of material components of fruits and vegetables. This paper also discusses Raman spectroscopy’s current technology and application difficulties in fruit and vegetable quality and safety testing. It looks forward to its future development trend, expecting to promote the broad application of Raman spectroscopy in fruit and vegetable quality and safety testing." @default.
