- W4386410478 abstract "For the purpose of developing an elderly-friendly traditional desserts with antioxidant and antidiabetic functions, Jinmal Dasik added with black sugar ginger syrup were prepared in 0%, 10%, 20%, 30%. In this study, black sugar ginger syrup Jinmal Dasik compared and analyzed the moisture content, pH, sweetness, salinity, chromaticity, texture, antioxidant ability(total polyphenol, flavonoid, DPPH, ABTS). The moisture content increased significantly as the ginger syrup content increased (p＜0.001). The pH was lower in the additive group than in the control group without ginger syrup. The sweetness significantly decreased as the ratio of ginger syrup increased (p＜0.001). The L-value was the highest in the control group and the lowest in the 30% additive group. The a-value and b-value showed higher values in the additive group than in the control group. Total polyphenols, DPPH and ABTS were higher in the additive group than in the control group. Flavonoids significantly increased as the ratio of ginger syrup increased (p＜0.001). Based on the results of this study, it is possible to develop elderly-friendly traditional Korean desserts with antioxidant and antidiabetic functions." @default.
