- W4387203668 abstract "Kodo millet (Paspalum scrobiculatum), one of the important minor millet, is a very good source of vitamins, minerals (calcium, potassium, magnesium, and zinc), carbohydrates, phytochemicals, essential amino acids, antioxidants, and lecithin. Once this millet was considered a staple food of poor men, it adorns the plates of prosperous and health-conscious people. Being rich in sulfur-containing phytochemicals and other nutrients, it is also named nutria-cereals. Kodo millet is a good source of starch. Starch granules of Kodo are mostly polygonal and larger in size as compared to other millets starch. Size of granules varies from 1.2 to 9.5 µm. The indentations present in large granules are due to proteins. Kodo millet starch shows A-type crystalline arrangement and pattern similar to cereal starch. Starch from the same millet can be utilized in the preparation of edible film as an alternative to biodegradable packaging material. This chapter covers the composition and functional characteristics of Kodo millet starch. It also includes applications of Kodo starch in the food industry." @default.
