The change in mean droplet diameter and emulsion viscosity with time have been correlated with solvent properties. In general an increase in oil polarity leads to a decrease in stability. Interfacial adsorption data, surface charge and oil droplet lifetime parameters have also been considered. Aliphatic hydrocarbons (C6–C16) have been studied in some detail. Stability increases with increase in alkane chain length. In contrast the interfacial film between SDDS solution and the same alkanes becomes more expanded as the chain length of the oil increases. Small quantities of hexadecane, dodecane or hexadecanol increase the stability of unstable hexane, benzene and cyclohexane emulsions. However, hexadecane has a far greater stabilizing effect on the bulk emulsion systems than hexadecanol at the same molar concentration. The results suggest that the main cause of instability in such systems may be molecular diffusion rather than droplet coalescence. In molecular diffusion, changes in droplet size can occur due to the inherently greater solubility of the disperse phase as small droplets. Consequently, the larger droplets can grow at the expense of the smaller ones. The magnitude of this effect is dependent on the solubility of the oil phase and is therefore larger for polar oils and the shorter chain alkanes. This process can be retarded by the presence of a small quantity of third component added to the oil phase." @default.
