- W74668868 abstract "The chapter reviews the history of the origin of vitamin. It was invented several years later by Funk who assumed that these essential dietary components were all amines, i.e. vital-amines which become contracted to “vitamine.” Gradually, the “e” was omitted to give the name “vitamin,” the concept of “vitamin” followed from the classical experiment of Hopkins in 1912 at Cambridge. He fed groups of rats on synthetic diets containing adequate quantities of purified carbohydrates, proteins, fats and minerals. He discovered that when fed the synthetic diet, the rats ceased to grow, although their energy intake was more than sufficient. If, however, he added a very small quantity of milk, to the daily diet, the rats grew at a rapid rate. The process could be reversed by withdrawing the milk from the group or by re-adding to the group fed on the synthetic milk. He calculated that the milk could not have significantly affected the energy content of the diet and that it must have been effective because it contained very small quantities of certain food which were essential for the health and growth. He called these components the “accessory food factors.” The idea that the diet must contain very small quantities of certain essential chemicals was completely novel at that time. It was difficult to believe an idea that very small quantities of organic chemicals could play such a significant role in health." @default.
