A含量（DP6-12）の試験により評価した．糖質米であるあゆのひかりは，低・中・高アミロース種を含む11品種の試験米の中で最も消化率が低かった．あゆのひかりの胚乳澱粉の見かけのアミロース含量およびFr. A含量（DP6-12）は，それぞれ21.8％，34.6％であった．あゆのひかりの炊飯米の消化抑制効果の要因を胚乳澱粉の構造特性から説明することは難しかった．さらにあゆのひかりの特徴としては，炊飯米での消化性試験後にも米粒の原形を保持することを見出した．この消化抑制効果は粉砕した試料を用いると無くなることから，あゆのひかりは難消化性構造を持つと考えられた．また，この難消化性構造には胚乳細胞壁が関与していることが示唆された．" @default.
