- W76390418 abstract "Consumption of a high fat diet is known to have deleterious effects on multiple organ systems, although the effects of high fat diet consumption on the brain remains poorly defined. Oxidative stress is believed to contribute to the aging of multiple tissues, including the brain, although currently it remains unclear whether consumption of a high fat diet is capable of altering age-related changes in oxidative stress within the brain. In the present study we report on the effects of high fat diet consumption on multiple indices of oxidative stress in the brain including the levels of protein carbonyls, HNE-modified proteins, nitrosylated proteins, and glycated proteins. In addition we report on the effects of a high fat diet on the expression of nuclear factor erythroid 2-related factor 2 (Nrf2), which is a critical regulator of antioxidant enzymes in the brain. Additionally, we report on the ability of aging to modulate the effects of high fat diet consumption on the brain. Taken together, these data have important implications for understanding how diet may alter the development of oxidative stress and aging within the brain.
