- W771180092 abstract "1. A description of the carcase muscles was undertaken to provide the necessary preliminary information for the present study. This description was based on the dissection of six preserved and sixty seven fresh sides of steer carcases, and is presented with details of origins, insertions, structure and relations.2. The carcase symmetry and the effects of age, fatness, semi-starvation and recovery were investigated to obtain a better understanding of the changes of weight relationships within the musculature, and to relate this information to the problems of breed improvement and the use of individual muscle weights as indices of the weight of the total musculature.3. The experimental material consisted of fifty seven beef steers and five unborn calves. The steers were of the following breeds: Poll Hereford, 24; Hereford, 8; Angus, 2; British steer of unknown breeding, 1; Brahman x Hereford bred, 9; Brahman, 5; and Northern Territory Shorthorn,8. Their age range was from six months to over four years, and they varied in fatness from 2% to 31% of dissectable fat. They were reared under a wide range of environmental conditions.4. The advantages of performing dissection studies on individual muscles and bones are high-lighted by the demonstration of previous misinterpretation in studies of commercial or anatomical cuts. It is clearly shown that the alleged late development of the expansive muscles of the loin is, in fact, a property of the cheap abdominal muscles.22. The findings in this study demonstrate that breed shape, or conformation, has no important effect on the distribution of muscle weight on steer carcases. It is clearly indicated that the reversion to later maturing cattle, which is necessary for the production of high weight—for-age with low level of fatness, will not be associated with any deterioration of muscle-weight distribution. It is also indicated that selection for muscle-weight distribution is likely to be associated with such small benefits, particularly when this selection must be made on misleading external appearances, or conformation, that it is wrong to reduce selection pressure on other more important factors such as growth rate and adaptation to major environmental areas." @default.
