They are important part of normal human and animal bacterial flora commonly associated with the gastrointestinal tract and genitourinary tract of animals and humans. They are able to produce antimicrobial substances such as bacteriocins, lactic acid and hydrogen peroxide, which have been shown to be beneficial for controlling the overgrowth of other, potentially pathogenic, bacteria. Bacteriocins are low-molecular weight single polypeptides or polypeptide complexes having an antimicrobial activity, synthesized in ribosome and secreted by bacterial cells. Genes encoding bacteriocins have been reported to be present on plasmid or genomic DNA. Lactobacilli are commonly used in the production of probiotics n a live microbial food supplements which beneficially affect the host by improving its intestinal microbial balance.
