- W934658541 abstract "Food safety for agricultural products during cultivation, selection and packing is primarily based on sanitary practices at each stage. Compliance with these practices is verified by onsite observations and laboratory studies. The main objective was to detect microbial hazards during cultivation, selection and packing of carrots in two companies and evaluate the effectiveness of chemical treatments in inactivating Salmonella on carrots. Carrot, water, soil and surface samples totaling 1427 samples were collected from 2 companies (?A? and ?B?). A record of the frequency in the sanitary guidelines violations was recorded. An Aerobic plate count (APC) was done for subsamples and total coliforms (TC) and fecal coliforms (FC) were only quantified in water. E. coli (EC) was identified by most probable number (MPN) while Salmonella was identified by culture and PCR with positive samples quantified by MPN. Listeria monocytogenes was identified only by culture and PCR. Germicidal treatments for 1 and 5 minutes with sodium hypochlorite (200 ppm), peracetic acid (80 ppm) and trichloroisocyanuric acid (200 ppm) were carrie dout using laboratory strains and sample strains from company ?A? of Salmonella. Salmonella and E. coli were determined in 1140 samples (530 Carrot, 198 water, 33 soil and 379 surfaces). Wildlife and feces was recorded within plots, water reservoirs and packaging areas from both companies. Irrigation water was negative for Salmonella; 81% showed low levels of EC from 3400 MPN/100 mL. Carrots from company A were deemed most contaminated: EC was detected in 58% and Salmonella in 9.4% with levels of 1.4 to> 1247 and <1.4 to521 MPN/carrot, respectively; with L. monocytogenes in carrots (N = 84) and surfaces (N = 203) it was 9.5 and 26% respectively. In the carrots from company the incidence of Salmonella and E. coli was 4 and 19% with levels of <1.4 to 18.7 and 1.4 to 1247NMP/carrot respectively. Company B showed the best levels for sanitary conditions in the work place. Exposure for 5 minutes with trichloroisocyanuric acid was most effective with a 4 log reduction of Salmonella CFU/carrot, irrespective of strains inoculated. The results show a high correlation between microbiological incidence and frequency in the violations of sanitary practices." @default.
