- W99757670 abstract "The recommendations on fresh meat treatment by various electrochemically activated solutions for its subsequent storage in refrigerated condition are presented. Electrochemical activation of solutions is as follows: anolyte of sodium sulfate (Na2SO4); anolyte of sodium acetate solution (СН3СOONa); catholyte of sodium acetate solution (СН3СOONa) with concentration of the specified salts 8-10 g/L by STEL 10N-120-01 device with diaphragm electrolyzer-activator in continuous-flow mode with current density of 0.03…0.10 A/sq cm (amperage 3.5…4.0 A) at 20…25°С, voltage 40…50 V with flow of 13…17 L/h with obtaining anolyte and catholyte fractions. The beef treated by electrochemically activated anolyte and catholyte solutions revealed the following indices: there was more protein by 0.58; 0.73; 0.53%; lesser cook down after boiling by 0.75; 0.96; 0.61%, and lesser amino-ammoniac nitrogen content by 0.54; 0.54; 0.40 mg/10ml of extract than in control samples. Fat and creatine content was about the same, and рН values in test samples were more favorable for meat quality." @default.
